Learn to make a sweet Apple Kugel, Apple Cake and a Harvest Salad!

Recipe’s for the class:

CAKE

  • 3 large eggs
  • 3/4 cup honey
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 1 1/4 cups canola oil
  • 1 1/2 tsp vanilla
  • 3 cups all purpose baking flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 3/4 tsp salt
  • 1/4 tsp allspice
  • Dash ground cloves
  • 4 Granny Smith apples (peeled, cored, and shredded)

ICING

  • 1 cup + 3 tbsp powdered sugar
  • 1/4 tsp vanilla
  • 1-2 tbsp non-dairy creamer

 

HARVEST SALAD

  • 1 small butternut squash peeled, seeded, and diced into 1.5 cm (1/2-inch) cubes
  • 1 1/2 tablespoon extra virgin olive oil divided
  • salt and freshly ground pepper
  • 190 grams (1 cup) uncooked quinoa
  • 480 grams (2 cups) water
  • 120 grams (2 cups) chopped kale leaves
  • 30 grams (1/4 cup) dried cranberries
  • 30 grams (1/3 cup) chopped pecans
  • 2 small apple diced into 1.5 cm (1/2-inch) cubes
  • 3 tablespoons pumpkin seeds

FOR THE APPLE CIDER VINAIGRETTE:

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly-squeezed orange juice
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt

 

APPLE KUGEL

  • 1 cup raisins (optional) – you may substitute other fruits like craisins, dried chopped apricots, or chopped drained pineapple
  • 12 oz wide egg noodles
  • 6 large eggs
  • 4 apples, cored and cut in small (1/4- to 1/2-inch) dice
  • 1 lb sour cream (2 cups)
  • 8 oz cottage cheese (1 cup)
  • 8 oz cream cheese, softened – OR farmer’s cheese, crumbled (1 cup)
  • 1 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 tsp salt
  • 2 teaspoon vanilla extract
  • Cinnamon and sugar for dusting
  • Nonstick cooking oil spray
